Worked great for my guava boba
This product came as expected, on time and worked well. I used it to make guava boba to serve in lemonade. It was a fun project and a fun addition to serve at my dinner party.

Just xanthan gum...dunno
My first time using it so have no baseline for comparison. I believe it's just xanthan gum as advertised, nothing special. Got it with Germall plus as i wanted to make aloevera gel at home. It turned out a mess. Guess I did not make it well. I have not used it since then.

Doesnt set well. Not ideal for Kohakutou
Batch 1 fail did not set stayed runny and sticky.(Figured I messed up new recipe)Batch 2: fail. Slightly thicker than first round. More of a wet jelly texture. Not stiff at all after cooling.(Ill try again)Batch 3: fail same results of round 2.(Me determinded to make it work)Batch 4: fail same results as 2 and 3Conclusion it doesnt set up like it should atleast not for making Silky Gems(Kohakutou) How do i know bought a different brand used the same recipe worked like a charm first try!

Made my fresh milled bread a winner
I have been trying to switch to home-milled flour and make my own bread with various grains: hard red, einkorn, khorasan (Kamut) and I don’t want to add extra gluten. It is a bit tricky using freshly milled flour and trying to get a result that will be passable for my kids in their school sandwiches for longer than the first day after it was baked.I started using this xanthan gum at 1/4 teaspoon per cup of flour as well as about 2 teaspoons of lemon juice for a 2 lb recipe as bread conditioner and it has changed the quality and texture.I made a half/half recipe with red wheat and khorasan with my stand mixer, then twice in the bread machine and the texture is now very similar to a home style wheat loaf we have been buying for years and the quality lasts almost a week!! Not so crumbly and gives a more even rise.I’ll keep using this so we can all enjoy healthier, delicious home made bread.
